Make one change, every week or month

I don't diet, but I'm trying to eat healthier in general. I'm finding what works for me is not to make any sudden drastic changes, but make one change at a time. For instance, we decided to switch to whole grain bread or sandwich rounds one month. The next month, we eliminate something with high fructose corn syrup. The month after that, switch to an organic fresh vegetable instead of the canned or frozen stuff. You can certainly make more changes per month if you feel comfortable with it, and I think you'll find it gets easier with time. At the end of a year, you'll have made at least 12 healthy, possibly life-changing, decisions.
