You will lose some weight as you train because fat will turn to muscle. However, please be aware that muscle weighs more than fat so, even if you lost weight first, you will likely gain weight from the muscle you get weight training. Why do you have to eat so many carbs? That makes no sense. Just eat a balanced healthy diet. That includes dairy, carbs, complex carbs, grains, legumes, fruit, vegetables, protein, etc. You don't need to change that in order to weight-train.
