Question: Is this a healthy (temporary) diet?

In my experience you don't lose weight Until you eat less; exercise alone never had any effect. With that diet I don't think you'd be getting enough protein, and maybe not any Complete proteins. A complete protein includes all the amino acids you need to repair tissue, and without it you'd probably lose more muscle than you want, and more muscle burns more calories. I don't know what vegetarians have to eat to get enough protein, but they manage to do it, some long term, without ill effects. Otherwise, I'd include some low fat meat, or else try the low carb diet, which is effective, but tough to stay on long term.
