Neither. Sounds like water. 1000 calories a day is not enough to build muscle or gain fat. And the average person can only build around .5 lbs of muscle per week, and that's with a lot of effort. It's physically inpossible to gain that much muscle in that time span.
When you severly restrict your diet, water weight is the first to go and it comes off rapidly, like 5+ lbs a week. When you stop restricting your diet, you gain water weight at the same rate
