Vegetarian Burgers - Share your recipes and tips

I tried this recipe for a broccoli burger (yes, you read correctly) that was absolutely delicious.



Half a kilo of broccoli (finely chopped)

1 finely chopped onion

Half a cup of breadcrumbs

Some grated cheese

1 tablespoon soy sauce (it's eve better if you could get the thick, dark type)

2 eggs, lightly beaten

1/4 cup water

Curry powder (optional)

Salt

Cooking oil



Preheat the oven to 180°C. Line a baking tray with paper and spread some oil on it.



In a mixing bowl, mix together the broccoli, onion, breadcrumbs, cheese. soy sauce and eggs, then add the water gradually while you continue to stir. Season to taste with salt and curry powder (if you do not eat curry then normal salt and pepper will do), then form the mixture into patties and place them on the baking tray. Sprinkle or drizzle the tops of broccoli burgers with a bit more oil.



Bake the burgers for 20 minutes or so, until they become firm and crispy. Gently flip them over and bake for another 15-20 minutes, until they're golden brown all over.
