Question: Will I gain weight when I let go of my very-low calorie diet ?

The reason your diet is so hard is because you went low cal instead of low carb... Low cal would mean giving up all the stuff that makes foods taste good. Low carb is easier, because it still allows you to eat fats.. Yes, you will gain some of the weight back. But if you keep the majority of what you eat low carb, you should be ok. Lots of proteins and veggies (as you're likely already eating) and some full fat dairy (regular cheese instead of light, full cream) and limited fruits and grains.
