Cutting fat without losing muscle

This for me is the most difficult part of the bulking / cutting technique. Every time i try to cut, i lose way too much muscle and i end up starting the cycle again. What tips can you offer for exercise and food during your cutting phase, that allows you to retain as much muscle as possible?
