Thanksgiving is a good time to share. I've just come across this great stuffing recipe which wont blow you totally off your fitness and diet plans. I hope you'll like it.
Savory Sweet Potato Stuffing
INGREDIENTS:
2 cups steamed sweet potatoes, cubed
1 multi-grain baguette, cut into 1/2-inch cubes
1 pound chanterelle mushrooms, chopped
1 cups onions, chopped
1 cup celery, chopped
1/3 cup hazelnuts, chopped
1 14-ounce can reduced-sodium chicken broth
2 teaspoons of minced fresh sage, thyme, and/or rosemary
1/4 teaspoon salt
DIRECTIONS:
1. Preheat oven to 250 degrees. Place bread on a baking sheet
and bake, turning once, until dry and toasty (but not browned).
2. Heat chicken broth over medium heat. Add onion, celery,
mushrooms, and sweet potatoes and stir for about 5 minutes.
3. Stir the toasted bread cubes, spices, and hazelnuts into the
vegetable mixture.
4. Cover the stuffing with foil and bake for 20 minutes. Enjoy!
