Question: How many sets of (sets?) should be done in a wight lifting workout?

How many sets of (sets?) should be done in a wight lifting workout?

When I work out I do, or try to do, 3x12 with about 15-20 seconds of rest in between sets. Meaning 3 sets of 12 reps, the last few reps being very difficult to execute although I end up doing 3x10 sometimes. My question is, once I finish my 3 sets, am I done with that exercise for the entire workout? I know that if I wait a little bit I can pump out 1 or 2 more sets, and even then I can wait even longer to do even more sets. Is this an ineffective method and I would just be wasting my time or will it work?
