I dont really understand how calories/exercise work? Explain?

They say "burn more calories than you eat, youll lose weight"
but say you eat 1000 calories a day.
7000 a week.
you work out 4/5 days a week and realistically youll only burn like 3000 calories at the very most.
so there is still 4000 calories you havent burned off.
how exactly do you "burn more than you eat" ???
