Would fasting for 3 day affect blood work?

I'm getting my nutrition levels tested again, and awhile ago I was fasting for 7 days and got hospitalized for having very low levels but I was wondering if I would have only fasted for 3 days would my nutrition levels been low ish but not medically unstable?
