I think if the child see you eating and enjoying healthy food, he'll definitely pick up the habit of it and eat it as well. My child eats all vegetables, even the bitter ones. I'm not a picky eater myself, I guess after some time he adapted my habit of eating mostly fish and vegetables.

I don't quite follow that. He doesn't eat vegetables but he eats salads? Aren't salads made up of vegetables? Here's an idea to get your husband to eat vegetables:
