I think that willpower is important when it comes to doing many things in life especially losing weight. If someone does not have a strong mindset, I don't believe they will be successful. In addition to proper education, I think that willpower is a very critical component to weight loss.

For example, snacking every 2-3 hours and drinking a glass of water before every meal takes little to no willpower. Anyone can manage those things. And they result in weight loss for most people.
Adding 5-10 servings of fruits and veggies to your diet each day- takes little willpower- you just pick up the apple or tomato and eat it.

As someone who used to be quite overweight, I can tell you that those things take quite a lot of willpower for someone who eats a very unhealthy diet. Snacking every 2-3 hours on healthy food? It does take dedication and will to choose the healthy foods when chips or cookies would be so much more appetizing.
The old adage: if it were so easy, everyone would be doing it, holds true here.

You are right. Just to force yourself to eat that often is a difficult thing. It would be easier to just fast the entire day for an overweight person than literally try to eat healthy foods every couple hours when so much junk is available to eat.
All the best,
