Need help with running schedule! :)?

Hey everyone! I am an equestrian but unfortunately am overweight. I am 5ft 8 and 190 lbs. Also, I am getting ready to go to college and most of the equestrian colleges make you take fitness tests. I know I won't be able to pass them(I also just want to get in shape in general) if I don't start conditioning. My goals in the long run is that I want to be able to run a mile in 11 minutes without stopping, 30 push ups in 1 minute 15 seconds, and 30 sit-ups in 1 minute 15 seconds. Also, I just want to be able to run a longer length. :) here is my normal exercise too!
Monday- ride 60 minutes
Tuesday- ride 30 minutes
Wednesday- ride 60 minutes
Thursday- ride 100 minutes(two different horses)
Friday- day off
Saturday- ride 90 minutes
Sunday- ride 60 minutes.
I would really appreciate any help anyone has to offer. Thank you for reading this and the help!! Also, every day, I will have time to run and exercise!
