Can nutritional Upper Level Intakes be exceeded while still remaining "healthy", not setting myself up for future health issues?

I'm a very active individual, 5'9'', 160 lbs, 3500 calorie diet, and since I've hit a barrier in gaining weight I'm planning on increasing my diet to 4000+ calories. The only problem with this is, with my 3500 calorie diet some of my nutrients are already narrowly beneath their upper level intakes (sodium around 2800 mg, calcium around 2100 mg) and adding almost any kind of food to my diet would cause them to exceed that limit. I haven't found any relative information posted on the web, but then again since I'm not even remotely familiar with the science behind sodium/calcium intake and how their variance or overabundance would affect the body I might be searching in the wrong places -- so if you don't have a specific answer to my question then at least somewhere to start researching would be useful. Thank you.
