I enjoy using dried fruits to make homemade treats instead of buying choclate candy and store bought cookies. The following recipe is a nice treat that contains good fiber.
Coconut Balls
1/4 pound pitted dates
1/2 pound dried figs
1/2 pound dried apricots
1 cup chopped nuts (any)
1/4 cup raisins
2 tablespoons shredded coconut
Set coconut aside.
Grind or chop the rest of the ingedients until very fine. Mix all together in a bowl with a spoon. Moisten your hands with water and then roll teaspoons of mixture into one inch balls.
Roll balls in the coconut and place on waxed paper in a dish or pan.
Makes 4 dozen pieces.
